To make pizza dough first add 2 cups 325 g of flour and 1 tsp 3 g of instant yeast to a bowl. Now remove the dough to a flour dusted surface and knead it around a bit to push the air out with your hands this is called knocking back the dough.
Then add 2 tsp 8 g of sugar tsp 3 g of salt 1 tbsp 3 g of dried oregano and tbsp 5 g of garlic powder and whisk the dry ingredients together.
How to make dough for pizza. Add yeast mixture and oil. Use the backs of your fingers to push the dough out wider. Start in the middle of the dough with both hands close together and slowly pull your hands apart allowing the dough to glide above your hands.
Turn the dough out. At this point you can freeze one or make two pizzas. Cover dough with a clean towel and let rest.
Gradually add the water mixing well to form a soft dough. Gently punch down dough then divide in half. Make a well in center.
Place the ball of dough in a large flour dusted bowl and flour the top of it. To make the dough mix the flour yeast and salt together in a large bowl and stir in the olive oil and milk. Gently stretch the dough using the back of your floured hands letting the weight of the dough pull the dough thinner.
Turn the dough out on to a. Roll each half on your counter to form a tight ball. Cover the bowl with a damp cloth and place in a warm room for about an hour until the dough has doubled in size.
Grease a large bowl with the remaining 2 teaspoons olive oil add the dough cover the bowl with plastic wrap and put it in a warm area to let it double in size about 1 hour.
