In a separate bowl mix together the egg milk coffee melted butter and vanilla extract. Divide into the sandwich tins and cook for 25 30 min until risen and firm and a skewer inserted into the middle comes out clean.
Preheat the oven to 190c or 170c for fan assisted ovens.
